Egg Curry - Kerala Mutta Roast

IngredientsBoiled Eggs - 6 nos.Potatoes - 2 nos.Onions chopped - 2 nos.Tomatoes chopped - 1 nos.Ginger garlic paste - 2 tbsp.Curry leaves - 1 SpringMasala IngredientsDried chilies - as neededBlack Pepper - ½ tsp.Star anise - 1 nos.Cardamom - 5 nos.Cinnamon stick - 1 nos.Cloves - 6 nos.Bay leaves - 2 nos.Poppy seeds - ½ tsp.Coriander seeds - 2 ½ tbsp.Grated coconut - ½ of a coconutMethodHeat a pan. Add all the masala ingredients listed above except coconut and sauté for a couple of minutes. Add coconut and dry roast until light golden brown. Add turmeric. Switch off the flame let the mix cool a bit and grind the masala without adding water.Cut boiled eggs into half and marinate with turmeric powder, chili powder, salt and water.Heat oil in a pan and shallow fry the eggs on both sides and keep it aside.Heat coconut oil in a pan. Add chopped onions, curry leaves and sauté till onions becomes translucent.Add turmeric powder and sauté.Add ginger garlic paste. Sauté for a couple of minutes.Add chopped tomatoes, ground Masala and salt, add 1/2 cup water. Cover and cook for about 5 minutes.Now add the potatoes that are peeled and cut into cubes and just enough water to cook the potatoes. Cover and cook on a medium flame till potatoes are cooked.Add the fried eggs and boil till the desired consistency is reached.Check for seasoning and add salt .Switch off flame and enjoy!!!
