Chettinad Egg Curry

IngredientsOnions chopped - 1 largeTomatoes - 2Ginger garlic paste - 11/2 tbsp.Cumin seeds - ½ tbsp.Garam Masala - ¼ tbsp.Mustard seeds - 1/2 tbsp.Vinegar - 1 tbsp.Curry leavesBoiled Eggs Masala IngredientsGrated coconut - 5 tbsp.Coriander powder - 1 tbsp.Chili powder - 1 ½ tbsp.Turmeric powder - ¼ tbsp.Black pepper - ½ tbsp.How to make tomato puréeBoil water in a pot.Add the tomatoes.Cover and cook the tomatoes until the skins begin to split.Remove the tomatoes from the boiling water.Peel the skins off the tomatoes when it's cold.Puree the peeled tomatoes in a blender without adding water..Method Heat oil in a pan.Turn heat to low.Add 1/4 tbsp. cumin seeds followed by black pepper. Stir for about a minute. Add coconut, keep stirring for a couple of minutes. Add turmeric powder sauté for a couple of minutes. Add coriander powder sauté for about a minute.Now add chilli powder keep stirring for about a minute till the raw smell is gone.Switch off the flame let the mix cool a bit and grind to a fine paste with adding enough water.Heat oil in a pan.Splutter mustard seeds.Add cumin seeds.Add chopped onions and sauté till onions becomes translucent.Add ginger garlic paste and curry leaves. Sauté for a couple of minutes.Add turmeric powder and sauté till its raw smell is gone.Add tomato purée and salt.Turn the heat to medium.Cover and cook till oil separates.Add ground masala with enough water. Now add garam masala.Mix well.Cover and cook for about 15 -20 minutes at medium heat.Heat oil in another pan.Add boiled eggs stir for about a minute at medium heat..Add salt,chilli powder keep stirring till it is fried.Switch off the flame and keep aside.Heat oil in another pan.Add boiled eggs stir for about a minute at medium heat..Add salt,chilli powder keep stirring till it is fried.Switch off the flame and keep aside.ed eggs and boil till the desired consistency is reached.Check for seasoning and add salt .Switch off flame and enjoy!!!
